Why this works

A light, protein-containing dessert that is relatively low in fat, but with moderate added sugar from the caster sugar.

Greek yoghurt. Provides protein and calcium, which support muscle maintenance and bone health.

Mixed berries. Add vitamin C, antioxidants and some fibre, though the portion per serving is modest.

Added sugar. Caster sugar lifts the free sugar content, so this is best enjoyed as an occasional treat rather than an everyday low-sugar dessert.

Method

  1. Place the berries in a small saucepan with the caster sugar and 1 tbsp water, then cook gently for 3–4 minutes until the fruit softens and releases its juices.
  2. Lightly crush the berries with a spoon to make a coarse purée, then leave to cool for a few minutes.
  3. Stir the Greek yoghurt until smooth, then fold it through the cooled berry mixture for a marbled effect.
  4. Divide the berry yoghurt fool between glasses or bowls and chill for 10 minutes before serving.
