Why this works
A modestly portioned dessert with some fruit and yoghurt, but it is relatively high in added sugar and saturated fat for the serving size.
Berry antioxidants. Mixed berries provide vitamin C, polyphenols and some fibre, which support overall fruit intake.
Calcium and protein. Greek yoghurt adds protein and a useful amount of calcium, depending on the yoghurt used.
Added sugar and saturated fat. Caster sugar, butter and snack bars increase free sugars and saturated fat, so this is best enjoyed as an occasional treat.
Method
- Preheat the oven to 180°C (Fan 160°C, 356°F, Gas Mark 4) and lightly grease two small ovenproof pots or ramekins.
- Divide the mixed berries between the pots and stir in the caster sugar and cornflour.
- Crumble the snack bar into coarse crumbs, then mix with the plain flour and butter until you have a rough crumble topping.
- Spoon the crumble mixture over the berries and gently press it down.
- Bake for 12 to 15 minutes, until the topping is golden and the berries are bubbling.
- Leave to stand for 2 minutes, then serve warm. If using, finish with a spoonful of Greek yoghurt or ice cream.
