Why this works

High-protein, low-carbohydrate breakfast with moderate to high fat and sodium; best suited to those needing a filling, energy-dense meal in smaller portions.

Protein-rich. Eggs, ham and cheese provide a substantial amount of complete protein to support satiety and muscle maintenance.

Calcium and B12. Cheese and eggs contribute calcium, vitamin B12 and other nutrients important for bone health and red blood cell formation.

Higher sodium. Cooked ham and cheese can make this dish relatively salty, which may be a consideration for people watching blood pressure or total salt intake.

Method

  1. Preheat the oven to 190°C (Fan 170°C, 374°F, Gas Mark 5) and lightly grease a muffin tin with the margarine.
  2. Press the cooked ham into the holes of the muffin tin to form little cups.
  3. Crack an egg into each ham cup, then pour in a small splash of milk around the egg.
  4. Scatter the cheese over the top of each cup.
  5. Bake for 15–20 minutes, until the eggs are just set and the cheese is melted and lightly golden.
  6. Leave to stand for a minute before lifting out and serving hot.
