Why this works

A filling, moderately high-energy meal with a useful amount of protein and fibre, but fairly high in salt and saturated fat from the cheese, butter and added salt.

Potassium from potatoes. Jacket potatoes provide potassium, which supports normal blood pressure and muscle function.

Calcium from Cheddar. Cheddar adds calcium for bone health, though it also increases saturated fat and salt.

Salt content. The added salt, plus processed mince and cheese, makes the dish relatively high in sodium.

Method

  1. Heat the oven to 200°C (Fan 180°C, 392°F, Gas Mark 6).
  2. Scrub the potatoes, prick them, and bake for 50-60 minutes until soft in the centre.
  3. While they bake, cook the vegetarian meat-free mince in butter with the herbs and a pinch of salt for 8-10 minutes.
  4. Split the cooked potatoes open and fluff the insides with a fork.
  5. Spoon the mince into each potato and top with cheddar cheese.
  6. Return to the oven for 5 minutes until the cheese melts.
