Why this works
A moderately filling savoury meal with decent protein, but fairly high in fat and salt due to the soft cheese, butter and added salt.
Potatoes provide potassium and vitamin C. The potato base contributes potassium, vitamin C and some B vitamins, though much of the vitamin C can be reduced by cooking.
Good protein from mince, egg and dairy. The vegetarian mince, egg, Greek yoghurt and soft cheese make this a reasonably protein-containing dish for a meat-free meal.
Salt and saturated fat are notable. Added salt plus butter and soft cheese push sodium and saturated fat up, so this may not suit a low-salt or heart-health focused plan.
Method
- Boil the potatoes for 15-18 minutes until tender, then drain and mash.
- Cook the vegetarian meat-free mince in butter with the herbs for 8-10 minutes, then cool slightly.
- Mix the mashed potatoes with the mince and one beaten egg, seasoning with salt.
- Shape into 8 small cakes and pan-fry in a little butter for 3-4 minutes on each side until golden.
- Stir the soft cheese with the Greek yoghurt to make a dip, then serve alongside the cakes.
