Why this works

A filling, protein-containing cottage pie with moderate fibre, but fairly high in energy, saturated fat and sodium due to the cheese, butter and added salt.

Potatoes provide potassium. Potatoes contribute potassium and vitamin C, supporting normal muscle and nerve function.

Cheddar adds calcium and protein. The cheese boosts calcium for bone health, along with extra protein.

Watch the sodium. The added salt, plus any salt in the vegetarian mince and cheese, can make this dish relatively high in sodium.

Method

  1. Peel and chop the potatoes, then boil in salted water for 15-20 minutes until tender.
  2. Meanwhile, melt the butter in a large pan and cook the vegetarian meat-free mince with the herbs for 8-10 minutes, stirring until browned and fragrant.
  3. Season with salt, then spread the mince mixture into a baking dish.
  4. Drain the potatoes and mash with butter and a little salt until smooth.
  5. Spoon the mash over the mince, then scatter over the cheddar cheese.
  6. Bake at 200°C (Fan 180°C, 392°F, Gas Mark 6) for 25-30 minutes until the top is golden and the filling is bubbling.
