Why this works

A filling, moderately high-energy bake with useful protein and fibre, but it is relatively high in saturated fat and sodium.

Protein from mince and cheese. The vegetarian mince and cheddar contribute a moderate protein content, which can help with satiety and muscle maintenance.

Potassium and fibre from potatoes. Potatoes provide potassium and some fibre, especially if the skins are left on, supporting nerve and muscle function.

Higher saturated fat and salt. Butter, cheddar and the added salt push up saturated fat and sodium, so this dish is less suitable for frequent everyday meals if heart health is a priority.

Method

  1. Preheat the oven to 190°C (Fan 170°C, 374°F, Gas Mark 5).
  2. Slice the potatoes thinly and boil for 8 minutes until just starting to soften, then drain.
  3. Cook the vegetarian meat-free mince in butter with the herbs for 6-8 minutes and season with salt.
  4. Layer the potatoes and mince in a baking dish, finishing with potatoes on top.
  5. Dot with a little more butter and scatter over the cheddar cheese.
  6. Bake for 35-40 minutes until the potatoes are tender and the top is deeply golden.
