Why this works

A protein-rich egg salad with a creamy texture, but fairly high in fat, saturated fat and sodium due to the salami, mayonnaise and added salt.

Protein and choline from eggs. Eggs provide high-quality protein plus choline, which supports normal brain and liver function.

Sodium and saturated fat are relatively high. Salami, mayonnaise and added salt push this dish towards a higher-salt, higher-saturated-fat profile.

Small micronutrient boost from celery and lemon. Celery and lemon juice add a little vitamin C, potassium and plant compounds, though the amounts are modest.

Method

  1. Boil the eggs for 9-10 minutes, then cool, peel and chop them.
  2. Finely chop the salami.
  3. Mix the eggs, salami, mayonnaise, vinegar and lemon juice together until evenly coated.
  4. Taste and adjust with salt and black pepper if using.
  5. Serve chilled.
