Why this works

A protein-rich, moderately filling salad with healthy unsaturated fats, but the added salt makes it relatively high in sodium.

High-quality protein. Eggs provide complete protein, supporting satiety and muscle repair, with around 12.7 g per serving.

Heart-healthy fats. Avocado contributes mainly monounsaturated fats, which can support a healthier lipid profile when eaten as part of a balanced diet.

Sodium concern. Half a teaspoon of salt across two servings makes this dish relatively high in sodium, at about 640 mg per serving.

Method

  1. Boil the eggs for 9 minutes, then cool, peel, and chop them.
  2. Halve the avocado, remove the stone, scoop out the flesh, and mash roughly with lemon juice.
  3. Fold the chopped eggs through the avocado mixture and season lightly.
  4. Serve on toast, in lettuce cups, or straight from the bowl.
