Why this works
A rich, energy-dense dessert that is high in saturated fat and sugar, with modest protein and limited fibre.
Vitamin C from strawberries. Strawberries provide vitamin C and some polyphenols, which add antioxidant value despite the dessert format.
Calcium from milk and cream. The dairy content contributes some calcium, though the portion is also high in saturated fat.
High saturated fat and sugar. Double cream, sponge cake and added sugar make this a less suitable choice for everyday consumption, especially for heart health and blood sugar control.
Method
- Slice the sponge cake into bite-sized pieces and arrange a layer in the bottom of a serving bowl or individual glasses.
- Drizzle the milk evenly over the cake so it softens without becoming soggy.
- Hull and slice the strawberries, then toss them with the caster sugar and leave for a few minutes to draw out the juices.
- Whip the double cream with the vanilla extract until softly thickened.
- Spoon some of the strawberries and their juices over the milk-soaked cake, then add a layer of the cream.
- Repeat the layers if needed, finishing with cream and a few strawberry slices on top.
- Chill for at least 30 minutes before serving so the flavours meld together.
