Why this works
A rich, dessert-style bake that is relatively high in sugar and saturated fat, with a modest amount of protein from milk and eggs.
Protein and calcium. Milk and eggs provide a useful amount of protein, plus calcium for bone health from the dairy content.
Saturated fat concern. Butter, eggs and full-fat dairy contribute a fairly high saturated fat content per serving.
Sugar content. Caster sugar and the cake base make this a high-sugar dessert, so it is best enjoyed as an occasional treat.
Method
- Preheat the oven to 160°C (Fan 140°C, 320°F, Gas Mark 3). Grease a small baking dish or individual ramekins lightly with butter.
- In a mixing bowl, whisk the eggs, caster sugar and vanilla extract until smooth and slightly pale.
- Warm the milk gently in a saucepan until just steaming, then slowly whisk it into the egg mixture.
- Crumb the cake into the greased dish, then pour the milk custard mixture over the top and allow it to soak for 5 minutes.
- Place the dish in a deep roasting tray and pour in enough hot water to come halfway up the sides.
- Bake for 30-35 minutes, until the custard is just set with a slight wobble in the centre.
- Leave to cool for a few minutes before serving warm, or chill for a firmer texture.
