A comforting baked pudding that transforms slices of cake into a rich, custardy dessert with a soft, spoonable centre and a lightly set top. It is simple, nostalgic, and ideal for using up plain cake with milk-based custard flavours.

Why this works

A fairly energy-dense dessert with moderate protein from milk, but relatively high in sugar and refined carbohydrate.

Calcium. Milk contributes useful calcium for bone health, with some phosphorus and B vitamins as well.

Protein. Milk adds a modest amount of protein, helping to improve satiety compared with cake alone.

Sugar and saturated fat. Cake typically contributes most of the added sugar and saturated fat, making this a treat rather than an everyday dish.

Method

  1. Preheat the oven to 180°C (Fan 160°C, 356°F, Gas Mark 4).
  2. Cut the cake into bite-sized cubes and arrange them in a lightly greased baking dish.
  3. Warm the milk in a saucepan until steaming, then pour it over the cake so it soaks in evenly.
  4. Leave the pudding to rest for 10 minutes so the cake absorbs the milk.
  5. Bake for 25–30 minutes until the top is set and golden, then serve warm.
