Why this works

A protein-rich, low-carbohydrate beef skillet with moderate saturated fat and a fairly high sodium content from added salt.

Iron and vitamin B12. Beef is a strong source of haem iron and vitamin B12, both important for red blood cell production and energy metabolism.

Vitamin K and folate. Spinach contributes folate, vitamin K and some vitamin A, supporting normal blood clotting and cell function.

Probiotic-style dairy and calcium. Greek yoghurt adds protein and calcium, though the exact probiotic benefit depends on the yoghurt culture used.

Method

  1. Melt the butter in a large frying pan and brown the minced beef for 6–8 minutes, breaking it up as it cooks.
  2. Add the red cabbage and cook for 8 minutes, stirring often, until it begins to soften.
  3. Toss in the spinach and cook for 1–2 minutes until wilted.
  4. Season with salt, black pepper and herbs, then cook for 2 minutes more so the flavours come together.
  5. Serve with a spoonful of Greek yoghurt on top.
