Why this works

A protein-rich, relatively low-carbohydrate skillet meal, but it is fairly high in saturated fat and sodium due to the beef, cheddar and added salt.

High-quality protein. Beef, cheddar and Greek yoghurt provide a substantial protein boost for muscle maintenance and satiety.

Micronutrients from vegetables. Red cabbage and peppers add vitamin C, carotenoids and some fibre, supporting immune health and antioxidant intake.

Saturated fat and sodium. The beef, cheddar and added salt make this dish higher in saturated fat and sodium, so portion size matters if cholesterol or blood pressure are concerns.

Method

  1. Heat a large frying pan over a medium-high heat and cook the minced beef for 5-6 minutes, breaking it up as it browns.
  2. Add the sliced red cabbage and mixed peppers, then season with salt and black pepper. Cook for 8-10 minutes until the cabbage softens but still has a little bite.
  3. Stir through a small handful of chopped herbs if using, then cook for 1 minute more.
  4. Remove from the heat and scatter over the grated cheddar cheese so it melts slightly.
  5. Serve hot with a spoonful of Greek yoghurt on top or alongside.
