Why this works

A protein-rich, lower-carbohydrate skillet with useful vegetable content, but fairly high in saturated fat, sodium and overall energy due to beef, cheddar and butter.

High-quality protein. Beef, cheddar and Greek yoghurt provide a substantial amount of protein to support muscle maintenance and satiety.

Vitamin C and antioxidants. Red cabbage and mixed peppers contribute vitamin C and protective plant compounds such as anthocyanins and carotenoids.

Saturated fat and sodium. Cheddar, butter and added salt make this a higher saturated fat, higher sodium dish, which may be less suitable for frequent intake.

Method

  1. Melt the butter in a large frying pan over a medium heat. Add the minced beef, season with salt and black pepper, and cook for 6–8 minutes until browned.
  2. Stir in the sliced red cabbage and mixed peppers, then cook for 8–10 minutes until the cabbage softens and the peppers begin to caramelise.
  3. Add the herbs and a splash of water if needed, then cook for 5 minutes more until everything is tender and well combined.
  4. Scatter over the cheddar cheese, cover the pan and leave for 2 minutes until melted.
  5. Serve hot with a dollop of Greek yoghurt on top.
