Why this works

A fairly energy-dense, cheesy pasta bake with moderate protein and fibre, but relatively high saturated fat and sodium.

Calcium-rich. Milk, cheddar, cream cheese and Parmigiano Reggiano provide a useful amount of calcium for bone health.

Provides some vegetable intake. Onions, courgette, spring onions and lemon add fibre, potassium and vitamin C, though the overall vegetable portion is modest.

Higher saturated fat and salt. Cheddar, cream cheese, margarine and added salt make this dish relatively high in saturated fat and sodium.

Method

  1. Preheat the oven to 200°C (Fan 180°C, 392°F, Gas Mark 6).
  2. Cook the brown onions and courgette in a little margarine until soft, then stir in the spring onions and a little lemon zest.
  3. Make a white sauce with margarine, plain flour if using and milk, then stir in the cream cheese and most of the grated mature cheddar cheese.
  4. Stir the vegetable mixture into the sauce and season with salt and black pepper.
  5. Cook the lasagne sheets briefly in boiling water if needed so they are flexible, then spread each one with the filling and roll up.
  6. Place the roll-ups in a baking dish, spoon over any remaining sauce, and scatter with Parmigiano Reggiano and the rest of the cheddar.
  7. Bake for 30-35 minutes until bubbling and golden, then rest for 10 minutes before serving.
