Why this works

A simple, sweet rice pudding that is low in protein and fibre, with moderate carbohydrate and relatively modest fat per serving.

Low sodium. This recipe is naturally very low in sodium, making it suitable for a low-salt diet.

Calcium-fortified potential. Depending on the non-dairy creamer used, it may contribute some calcium, though this varies widely by brand.

Low fibre and protein. Pudding rice and sugar provide energy but very little fibre or protein, so it is less filling than higher-fibre desserts.

Method

  1. Tip the pudding rice into a saucepan with the water and bring to a gentle simmer.
  2. Cook slowly, stirring often, until the rice is soft and the liquid has mostly been absorbed.
  3. Stir in the non-dairy creamer, sugar and vanilla extract.
  4. Cook for another 5 minutes until thick and glossy, then spoon into bowls and grate over nutmeg to serve.
