Why this works

A savoury, moderate-energy fried rice with a good amount of protein, but it is relatively high in saturated fat and sodium for the portion size.

Protein from eggs. Three eggs across two servings provide a useful amount of complete protein, supporting satiety and muscle maintenance.

Micronutrients. Eggs contribute vitamin B12, vitamin D and selenium, while spring onions add small amounts of vitamin K and vitamin C.

Sodium and saturated fat. Gochujang and added salt increase sodium, and butter raises saturated fat, so this dish is less suitable for low-salt or heart-focused eating.

Method

  1. Whisk the gochujang with a splash of water until smooth.
  2. Melt the butter in a large frying pan over medium-high heat, then scramble the eggs until just set. Remove to a plate.
  3. Add the cooked rice to the pan and fry for 2-3 minutes until hot.
  4. Stir through the gochujang mixture and cook for 1-2 minutes until evenly coated.
  5. Return the eggs to the pan, toss together, and serve hot.
