Why this works
A light, fruit-based yoghurt pot with decent fibre and moderate protein, but relatively high natural and added sugars from the fruit, vanilla yoghurt and honey.
Fibre support. Apples, plums and chia seeds provide a useful amount of fibre, which can help with satiety and digestive health.
Vitamin C. Lime, apples and plums contribute vitamin C and other antioxidants, supporting immune function and reducing oxidative stress.
Added sugar. Vanilla yoghurt and honey increase the sugar content, so this is less suitable for those aiming to keep free sugars low.
Method
- Stir the vanilla yoghurt and yoghurt together in a bowl until smooth.
Keep the yoghurt just cold enough to hold its shape, then stop as soon as the mixture looks glossy and even; over-stirring can make it slack and a little watery.
- Chop the apples and plums into small bite-sized pieces.
Aim for pieces about the size of the tip of your thumb so they sit neatly in the pot and give a pleasant bite, and remove any bruised or bruisy-looking flesh for a cleaner flavour.
- Fold the fruit through the yoghurt, then drizzle in the honey.
Fold gently from the bottom upwards so the fruit stays intact, then drizzle the honey in a thin stream so it threads through rather than sinking in one sticky patch.
- Spoon into serving glasses or bowls and scatter over the chia seeds.
Fill the glasses almost to the top and tap them lightly on the counter to settle the mixture before scattering the chia, which helps avoid empty pockets at the base.
- Chill for 5 minutes if you have time, then serve.
A brief chill is enough to let the chia take the edge off the yoghurt and soften the fruit flavours; leave it much longer and the mixture can become looser as the fruit releases juice.
