Why this works

A rich, cheese-forward bake with moderate protein and relatively low carbohydrate, but high in saturated fat and energy.

Vitamin C from peppers. Orange peppers provide useful vitamin C and carotenoids, supporting immune function and antioxidant intake.

Calcium and protein. Mozzarella and Greek yoghurt contribute calcium and protein, which support bone health and satiety.

High saturated fat. Butter and mozzarella make this dish high in saturated fat, so it is best enjoyed occasionally or in smaller portions.

Method

  1. Preheat the oven to 200°C (Fan 180°C, 392°F, Gas Mark 6).
  2. Halve the orange pepper, remove the seeds and slice into thick strips.
  3. Melt the butter in a small pan or microwave-safe bowl, then stir it into the Greek natural yoghurt to make a smooth, creamy sauce.
  4. Arrange the orange pepper in a small baking dish and spoon over the yoghurt mixture.
  5. Scatter the mozzarella cheese evenly over the top.
  6. Bake for 18–22 minutes until the pepper is tender and the cheese is melted and lightly golden.
  7. Serve hot straight from the dish.
