Why this works

A protein-rich, low-carbohydrate breakfast with moderate saturated fat and sodium from cheese, butter and added salt.

High-quality protein. Eggs, Greek yoghurt and cheddar provide a substantial amount of complete protein to support satiety and muscle maintenance.

Vitamin C and carotenoids. The orange pepper contributes vitamin C and antioxidants such as carotenoids, which support immune health and help iron absorption.

Saturated fat and sodium. Butter, extra mature cheese and added salt increase saturated fat and sodium, so this dish is best enjoyed in moderation if heart health is a priority.

Method

  1. Dice the orange pepper finely.
  2. Melt the butter in a non-stick frying pan over a medium heat and soften the pepper for 3-4 minutes.
  3. Whisk the eggs with the Greek yoghurt and a pinch of salt and black pepper if using.
  4. Pour into the pan and stir gently until just set and creamy.
  5. Scatter over the grated extra mature cheese, allow it to melt, then serve immediately.
