Why this works
A hearty, savoury breakfast muffin with high protein and energy, but also fairly high in saturated fat and salt due to the bacon, cheese and butter.
Protein-rich. Eggs, Greek yoghurt, bacon and cheddar-style cheese contribute a substantial protein content, which may help with satiety.
Calcium source. The cheese, yoghurt and milk provide calcium, supporting bone health.
Salt and saturated fat concern. Bacon, extra mature cheese and butter push up sodium and saturated fat, so this is less suitable for those watching blood pressure or cholesterol.
Method
- Preheat the oven to 190°C (Fan 170°C, 374°F, Gas Mark 5) and line a 6-hole muffin tin with cases or lightly butter the holes.
- Cook the bacon in a frying pan until crisp, then drain on kitchen paper and chop into small pieces.
- Finely dice the orange pepper and grate the extra mature cheese.
- In a bowl, whisk the eggs with the Greek yoghurt and melted butter until smooth.
- Stir in the flour, most of the cheese, the chopped bacon, diced pepper and a good pinch of black pepper to make a thick batter.
- Divide the mixture evenly between the muffin cases and sprinkle the remaining cheese over the top.
- Bake for 20–25 minutes until risen, golden and set in the centre.
- Leave to cool for 5 minutes before serving warm.
