Why this works

A rich, protein-dense bake that is fairly low in carbohydrates but high in saturated fat and sodium, so it suits an occasional rather than everyday meal.

High-quality protein. Eggs, Greek yoghurt and cheeses provide a substantial amount of complete protein for satiety and muscle maintenance.

Calcium-rich. Mozzarella and extra mature cheese contribute significant calcium for bone health, though they also add saturated fat.

Low in fibre and vegetables. Aside from the pepper, this dish is quite low in fibre, so it is best paired with extra vegetables or salad.

Method

  1. Heat the oven to 200°C (Fan 180°C, 392°F, Gas Mark 6).
  2. Slice the orange pepper and cook it briefly in a buttered frying pan until beginning to soften.
  3. Beat the eggs with Greek yoghurt until smooth, then stir in half the mozzarella and half the extra mature cheese.
  4. Add the pepper to an ovenproof dish and pour over the egg mixture.
  5. Top with the remaining cheeses and bake for 20-25 minutes until set and golden.
  6. Rest for 5 minutes before serving.
