Why this works

A protein-rich, lower-carbohydrate breakfast bake, but fairly high in saturated fat and salt due to the bacon, cheese and butter.

High-quality protein. Eggs, cottage cheese, Greek yoghurt and bacon make this dish particularly protein-dense, which supports satiety and muscle maintenance.

Micronutrients from eggs and pepper. Eggs provide vitamin B12 and selenium, while the orange pepper adds vitamin C and carotenoids for antioxidant support.

Higher salt and saturated fat. Bacon, extra mature cheese and butter increase the saturated fat and sodium content, so this is less suitable as an everyday heart-healthy option.

Method

  1. Preheat the oven to 200°C (Fan 180°C, 392°F, Gas Mark 6).

Make sure the oven is fully up to temperature before the dishes go in so the eggs start setting immediately rather than weeping. If you are using fan, keep the oven shelf in the middle for the most even heat.

  2. Melt the butter in a frying pan over a medium heat, then add the bacon and cook until beginning to crisp.

Let the butter foam but not brown; if it starts turning nutty and dark, lower the heat slightly so the bacon renders without catching. You want the rashers to take on a little colour and crisp at the edges, not go brittle all over.

  3. Add the orange pepper and cook for 3–4 minutes until softened.

Aim for softened peppers with a slight bite rather than collapsed strands, and stir often so they pick up flavour from the bacon fat without scorching. If the pan looks dry, add the tiniest knob of butter rather than turning the heat up.

  4. Divide the bacon and pepper mixture between two small ovenproof dishes.

Choose dishes that are just large enough for the mixture to sit fairly snugly, which helps the eggs hold together and bake evenly. If the filling is spread too thinly, the eggs can overcook before the yolks stay soft.

  5. Spoon the natural cottage cheese and Greek yoghurt over the top, then stir lightly so the mixture is creamy but still textured.

Use a gentle folding motion so the dairy loosens the filling without turning it into a smooth paste. Stop as soon as you see marbling from the cottage cheese, which gives a better creamy-textured finish.

  6. Grate in the extra mature cheese and season with black pepper.

Grate the cheese finely so it melts quickly in the oven and forms a savoury top rather than a heavy crust. Add the black pepper now so it can perfume the mixture instead of sitting only on the surface.

  7. Make a small well in each dish and crack in the eggs.

Make the well deep enough to cradle each egg white, but not so deep that the filling underneath disappears completely. Crack each egg into a small cup first if you want to avoid broken yolks or stray shell.

  8. Bake for 10–12 minutes, or until the whites are just set and the yolks are still slightly runny.

Bake until the whites around the edges look opaque and just firm, with a slight wobble still in the centre from carryover heat. Pull the dishes out as soon as the yolks tremble when nudged, because they will continue setting for a minute or two.

  9. Serve straight away with extra black pepper scattered over the top if you like.

Serve immediately so the yolks stay glossy and the cheese remains soft rather than rubbery. A final crack of pepper is best done at the table, where it stays fragrant and sharp.
