Why this works

A protein-rich, relatively low-carbohydrate baked egg dish, but it is fairly high in saturated fat and sodium due to the cheese, butter, salsa and added salt.

High-quality protein. Eggs and Greek yoghurt provide complete protein, supporting satiety and muscle maintenance.

Calcium and B12. Cheese and dairy contribute calcium, while eggs and dairy also provide vitamin B12.

Sodium and saturated fat. Extra mature cheese, butter, salsa and added salt make this dish higher in sodium and saturated fat than a lighter egg bake.

Method

  1. Preheat the oven to 190°C (Fan 170°C, 374°F, Gas Mark 5).

Let the oven come fully up to temperature so the dishes start cooking immediately rather than slowly warming, which can make the eggs spread before the whites begin to set.

  2. Butter two small ovenproof dishes.

Soften the butter first if it is fridge-cold, then sweep it right into the corners and up the sides to prevent the yoghurt and egg from sticking and catching brown at the edge.

  3. Spoon a layer of Greek natural yoghurt into each dish and season with black pepper.

Stir the yoghurt in the pot if it has separated, then spread it evenly so the eggs sit level; a smooth base helps the whites set more uniformly.

  4. Make a slight hollow in the centre and crack in the eggs.

Make the hollow just deep enough to hold the egg without breaking the yoghurt base, and crack each egg into a small cup first so you can slide it in neatly and avoid shell fragments.

  5. Scatter over the grated extra mature cheese and spoon a little hot salsa on top.

Keep the cheese mostly on the yoghurt and around the eggs rather than covering the yolks completely, so it melts into a golden top without insulating the centres from the heat.

  6. Bake for 10–12 minutes until the whites are set and the yolks are still soft, or longer if you prefer firmer yolks.

Watch for the whites to turn opaque around the edges first and give the dish a gentle nudge: the yolks should still wobble slightly in the middle when you remove them, as they will firm up a little from residual heat.

  7. Serve immediately.

Rest them for under a minute if needed while you butter the toast, then serve at once so the yolks stay silky and the cheese remains molten rather than turning leathery.
