Why this works

A protein-rich, very low-carb breakfast bake that is also relatively high in saturated fat and sodium due to the cheese and butter.

High-quality protein. Eggs and cheese provide a substantial amount of complete protein, supporting satiety and muscle maintenance.

Calcium and B12. Mozzarella, cheddar and milk contribute calcium, while eggs and dairy add vitamin B12 for nerve and red blood cell health.

Higher saturated fat and sodium. Cheddar, mozzarella and butter raise saturated fat, and processed cheese slices can increase sodium, so portion size matters.

Method

  1. Preheat the oven to 180°C (Fan 160°C, 356°F, Gas Mark 4).

Let the oven fully come up to temperature before the dish goes in, so the bake starts setting evenly rather than spreading and turning watery at the edges.

  2. Butter a small baking dish well.

Soften the butter first if needed and make sure you get right into the corners and up the sides; a thin, even film prevents the eggs from catching and helps the bake release cleanly.

  3. Whisk together the eggs and low fat milk until smooth.

Whisk just until the yolks and whites are fully blended and the mixture looks pale and evenly yellow, but stop before it turns very frothy, which can make the texture a little airy and uneven.

  4. Stir in most of the mozzarella and half of the cheddar slice cheese.

Fold the cheeses through gently so they are distributed without breaking down into a paste, and keep a small handful back if you want more visible pockets of melted cheese on top.

  5. Pour into the dish and top with the remaining cheese.

Pour the mixture in slowly to avoid disturbing the cheese layer, then give the dish a tiny shake so the surface levels out and the topping sits evenly.

  6. Bake for 18-22 minutes until puffed, golden and just set in the centre.

Check from the 18-minute mark onwards: the edges should be set and lightly browned while the centre still has the faintest wobble, as it will finish cooking from the residual heat.
