Why this works
A hearty, energy-dense hash that is high in protein and micronutrients but also high in saturated fat and sodium, mainly from the chorizo, cheese and butter.
Rich in vitamin A. Sweet potato and peppers provide beta-carotene, which supports eye and immune health.
Good protein content. Eggs, chorizo and cheese contribute a substantial amount of protein for satiety and muscle repair.
Higher salt and saturated fat. Chorizo, cheese and butter raise sodium and saturated fat, so this is best enjoyed occasionally if watching heart health.
Method
- Heat the olive oil and butter in a large frying pan over a medium heat.
- Add the chopped onion and peppers with a pinch of salt, then cook for 5-6 minutes until softened.
- Stir in the garlic and cook for 1 minute until fragrant.
- Add the diced sweet potato and chorizo sausages, then cook for 12-15 minutes, stirring regularly, until the sweet potato is tender and the chorizo has released its smoky oil.
- If needed, add a splash of water and cover briefly to help soften the sweet potato.
- Once everything is cooked through, scatter over the cheese and let it melt into the hash.
- In a separate pan, fry the eggs to your liking.
- Divide the hash between plates and top with the fried eggs before serving.
