Why this works

A hearty, protein-rich shakshuka that is energy-dense and high in saturated fat and sodium, largely due to the chorizo, cheese and added salt.

High-quality protein. Eggs, chorizo and cheese provide a substantial protein boost, supporting satiety and muscle maintenance.

Vitamins from vegetables. Tomatoes, red pepper, onion and coriander contribute vitamin C, carotenoids and antioxidant compounds.

Sodium and saturated fat are notable. Chorizo, cheese and added salt make this dish relatively high in sodium and saturated fat, which may be less suitable for frequent intake.

Method

  1. Preheat the oven to 200°C (Fan 180°C, 392°F, Gas Mark 6).
  2. Slice the chorizo sausages and cook in a large ovenproof frying pan over a medium heat until the fat renders and the edges start to crisp.
  3. Add the onion, red pepper and garlic, then cook for 5 minutes until softened.
  4. Stir in the ground cumin and smoked paprika, then pour in the chopped tomatoes and orange juice. Simmer for 8–10 minutes until slightly thickened. Season to taste.
  5. Make 4 small wells in the sauce and crack an egg into each one.
  6. Scatter the cheese over the top and transfer the pan to the oven. Bake for 8–10 minutes, until the egg whites are set but the yolks are still soft.
  7. Finish with fresh coriander if using, then serve hot with bread or flatbreads.
