Why this works

A moderately energy-dense breakfast pot with useful protein and healthy fats, but fairly high in natural and added sugars from juice, honey and fruit.

Calcium and protein from yoghurt. Yoghurt contributes protein for satiety and calcium for bone health, especially helpful at breakfast.

Vitamin C from orange and juice. Orange segments and juice provide vitamin C, which supports immune function and iron absorption.

Healthy fats and minerals from pistachios. Pistachios add mostly unsaturated fats, plus potassium, magnesium and a little extra fibre.

Method

  1. Spoon the yoghurt into two bowls or glasses.

Use chilled yoghurt so it holds its shape neatly in the bowl or glass, and aim for a level surface rather than leaving it slumped against one side.

  2. Stir in the orange juice gradually until the yoghurt is lightly flavoured and smooth.

Add the juice in a thin stream while stirring to prevent the yoghurt from turning watery or splitting; stop as soon as it looks creamy and faintly marbled rather than fully loose.

  3. Sprinkle over chopped pistachio nuts for texture.

Toast the pistachios lightly first if you want a deeper flavour, then chop them quite roughly so you still get a noticeable crunch without any hard shards.

  4. Chill for 5 minutes if you want a colder, thicker pot before serving.

Cover the pots while chilling so they do not pick up fridge odours, and do not leave them so long that the granola softens too much before serving.
