Why this works

A light, veggie-led dressing with a moderate carbohydrate content and some protein from yoghurt; generally lower in fat and calories, but the citrus juice and yoghurt contribute natural sugars.

Cabbage fibre and vitamin C. Cabbage provides fibre for digestive health, plus vitamin C and other antioxidants that support immune function.

Yoghurt calcium and protein. Yoghurt adds protein and calcium, supporting bone health and helping the dressing feel more satisfying.

Mustard and citrus flavour. Mustard and lemon/orange juice boost flavour with minimal calories, but they also contribute some sodium and natural sugars.

Method

  1. Finely shred the cabbage and place it in a large bowl.
  2. In a separate bowl, mix the yoghurt, orange juice, lemon juice, mustard and pepper until smooth.
  3. Pour the dressing over the cabbage and toss well to coat.
  4. Serve straight away or chill for 10 minutes to let the flavours develop.
