Why this works

A moderate-energy pudding with some protein and healthy fats from eggs, yoghurt and pistachios, but with a relatively high sugar content from caster sugar and orange juice.

Protein and B vitamins. Eggs and milk provide good-quality protein plus vitamin B12 and riboflavin, which support energy metabolism.

Pistachio nutrients. Pistachios contribute unsaturated fats, vitamin E, magnesium and potassium, with a small amount of fibre.

Sugar content. Caster sugar and orange juice raise the free sugar content, making this less suitable for a low-sugar or blood-sugar-focused diet.

Method

  1. Preheat the oven to 160°C (Fan 140°C, 320°F, Gas Mark 3) and place a baking dish inside a larger roasting tin.
  2. Whisk the eggs, milk, yoghurt and orange juice together until smooth.
  3. Stir in finely chopped pistachio nuts.
  4. Pour the mixture into four small ramekins and place them in the roasting tin.
  5. Pour in enough hot water to come halfway up the sides of the ramekins.
  6. Bake for 25-30 minutes, until just set with a slight wobble in the centre.
  7. Cool before serving.
