Why this works

Rich, energy-dense risotto with a good protein content, but high in saturated fat and sodium.

Protein and calcium. Bacon, cheddar and parmesan provide a substantial protein hit, alongside calcium for bone health.

Sodium load. Vegetable stock, bacon and cheese make this dish relatively high in sodium, so it may not suit a low-salt diet.

Low fibre. White arborio rice and a small amount of onion provide limited fibre, so this is not especially gut-friendly.

Method

  1. Put the vegetable stock in a saucepan and keep it at a gentle simmer.
  2. In a separate large pan, cook the bacon over a medium heat until crisp. Remove and set aside, leaving a little fat in the pan.
  3. Add the onion and butter to the pan and cook gently until softened.
  4. Stir in the arborio rice and cook for 1 minute until the grains look glossy.
  5. Pour in the white wine, if using, and stir until absorbed.
  6. Add the hot stock a ladleful at a time, stirring often and waiting until each addition is absorbed before adding more. Continue for 18–20 minutes until the rice is tender and creamy.
  7. Stir through the grated cheese and most of the bacon. Season with black pepper to taste.
  8. Serve immediately, topped with the remaining bacon and a little extra cheese if desired.
