Why this works

A savoury, energy-dense scone with a good protein hit, but it is relatively high in saturated fat and sodium from the bacon, cheese and butter.

Protein-rich. Bacon, cheese, yoghurt and egg provide a moderate amount of protein per serving, supporting satiety and muscle maintenance.

Calcium source. Cheddar cheese and Greek yoghurt contribute meaningful calcium for bone health.

Sodium and saturated fat. Bacon, mature cheese and butter make this recipe relatively high in sodium and saturated fat, so it is best enjoyed in moderation.

Method

  1. Preheat the oven to 200°C (Fan 180°C, 392°F, Gas Mark 6) and line a baking tray with baking parchment.
  2. Cook the bacon in a frying pan over a medium heat until crisp, then leave to cool slightly and chop into small pieces.
  3. In a mixing bowl, combine the self-raising flour, baking powder and a good pinch of black pepper.
  4. Rub in the butter with your fingertips until the mixture resembles fine breadcrumbs.
  5. Stir through the chopped bacon and grated extra mature cheese.
  6. Mix the Greek yoghurt with a splash of milk, then add it to the dry ingredients and bring together quickly to form a soft dough. Do not overwork it.
  7. Turn the dough out onto a lightly floured surface, pat to about 2 cm thick, and cut into rounds.
  8. Place on the prepared tray and bake for 12–15 minutes until risen and golden.
  9. Serve warm, split open with a little butter if you like.
