Why this works
A rich, energy-dense brunch dish that is high in protein and fat, but also high in saturated fat and sodium.
Protein from eggs, chorizo and cheese. Provides a useful protein hit for satiety and muscle repair, with around 28g per serving.
Calcium from cheese. Cheese contributes calcium for bone health, though it also adds a significant amount of saturated fat.
High sodium and saturated fat. Chorizo, cheese, mayonnaise and added salt make this dish relatively high in sodium and saturated fat, so it is best enjoyed occasionally.
Method
- Preheat the oven to 200°C (Fan 180°C, 392°F, Gas Mark 6). Lightly line a baking tray and place the chorizo sausages on it.
- Bake the chorizo for 12–15 minutes until cooked through, then slice into thick rounds.
- Meanwhile, warm the orange juice in a small pan over a medium heat and simmer until reduced to a sticky glaze.
- Toast or grill the bread until golden, then spread each piece with a thin layer of mayonnaise.
- Top the bread with sliced chorizo and a little cheese, then return to the oven or grill briefly until the cheese melts.
- In a non-stick frying pan, fry or poach the eggs to your liking.
- Place an egg on each crostini, drizzle with the orange glaze, and serve immediately.
