Why this works
A moderate-calorie, protein-containing bowl with plenty of fibre from cabbage, but some saturated fat from butter and eggs.
Cabbage provides fibre and vitamin C. Cabbage contributes gut-friendly fibre plus vitamin C and plant compounds that support general health.
Eggs add high-quality protein and micronutrients. Eggs supply complete protein, vitamin B12, selenium and choline, which support muscle and nervous system function.
Yoghurt adds calcium, but watch fat and salt. Yoghurt can provide calcium and beneficial cultures if live, though the exact fat level depends on the yoghurt used and the added salt increases sodium slightly.
Method
- Melt the butter in a pan over a medium heat and add the cabbage.
Keep the butter moving in the pan so it foams, then just starts to smell nutty without browning too fast; if it darkens sharply, the heat is too high.
- Cook for 10-12 minutes, stirring occasionally, until soft and lightly caramelised.
Let the cabbage sit in brief contact with the pan between stirs so it picks up golden edges, and add a tiny splash of water if the pan looks dry before it softens.
- Meanwhile, simmer the eggs in water for 7 minutes, then cool briefly and peel.
Hold the water at a very gentle simmer rather than a rolling boil so the eggs do not knock against each other and crack, and peel while they are just cool enough to handle for the neatest result.
- Divide the cabbage between bowls, top with the eggs, and spoon over the yoghurt.
Warm the yoghurt slightly by taking it out of the fridge ahead of time so it does not chill the cabbage, and season at the table rather than heavily in the bowl to keep the flavours balanced.
- Serve warm straight away.
Serve immediately while the cabbage is still yielding and the egg yolks are softly set; if it sits too long, the yoghurt can loosen and the texture becomes less satisfying.
