Why this works
Moderate in energy with some protein and fibre, but contains a notable amount of saturated fat and added sodium from butter and salt.
Cabbage fibre and vitamin C. Cabbage contributes fibre plus vitamin C, supporting digestive health and normal immune function.
Egg nutrients. Eggs provide complete protein, vitamin B12 and selenium, which support muscle maintenance and normal metabolism.
Saturated fat from butter. Butter increases saturated fat, so this dish is best enjoyed in moderation if managing cholesterol intake.
Method
- Finely shred the cabbage and squeeze out any excess moisture.
Shred it as thinly as possible so the fritters fry evenly, then press the cabbage firmly in a clean tea towel or sieve until no watery droplets run out; too much liquid will make the batter slack and the fritters split in the pan.
- Beat the eggs in a bowl, then mix in the cabbage until evenly coated.
Aim for a loose, well-coated mixture rather than a wet pool of egg, and stop mixing as soon as the cabbage looks glossy so you do not crush it into a mush.
- Heat the butter in a frying pan over a medium heat.
Let the butter foam settle and turn lightly nut-brown at the edges before adding anything, but do not let it darken too far or the fritters will taste bitter.
- Spoon in small portions of the cabbage mixture and cook for 3-4 minutes on each side until golden.
Leave a little space between each spoonful so they can crisp rather than steam, and turn them only when the underside is properly set and deep golden, not pale yellow.
- Stir the yoghurt until smooth and serve as a dip alongside the fritters.
Stir until the yoghurt looks silky and spoonable, then taste for sharpness before serving so you can balance it with a pinch more salt if needed.
