Why this works
A sweet, tangy chutney that is low in fat and protein but relatively high in added sugar and sodium per serving.
Polyphenol-rich fruit and spices. Apple, raisins, ginger and cinnamon contribute plant compounds that may offer antioxidant benefits.
Very low in fat. This chutney is naturally almost fat-free, so it fits well alongside richer foods when portioned sensibly.
Sodium and sugar are notable. Added sugar and salt make this a less suitable option for those watching blood pressure or free sugar intake.
Method
- Cut the aubergine into small cubes and peel, core and chop the apples. Finely dice the onion.
- Place the aubergine, apple and onion into a heavy-based saucepan with the caster sugar, white wine vinegar, ginger, mustard seeds and cinnamon.
- Add a good pinch of salt and black pepper, then bring to a gentle simmer, stirring until the sugar has dissolved.
- Cook uncovered over a low heat for 45–55 minutes, stirring regularly, until the chutney is thick, glossy and the fruit and vegetables have softened to a jammy texture.
- If using raisins, stir them in during the last 10 minutes so they plump up slightly.
- Spoon into sterilised jars while hot and seal once cool. Leave for at least a week before eating for the best flavour.
