Why this works

A savoury-sweet tray bake that is high in protein but also high in fat, saturated fat and sodium, so best enjoyed occasionally rather than as an everyday meal.

Protein from bacon. Provides a substantial protein boost, which can help with satiety and muscle repair.

Vitamin C from peppers. Red and yellow peppers add vitamin C and carotenoids, supporting immune function and antioxidant intake.

High sodium concern. Bacon and barbecue sauce make this dish notably salty, so it may be unsuitable for those limiting sodium or following a heart-healthy diet.

Method

  1. Preheat the oven to 200°C (Fan 180°C, 392°F, Gas Mark 6) and line a roasting tray with foil.
  2. Cut the bacon into rough pieces, deseed and slice the red pepper and yellow pepper into chunks, and drain the tinned pineapple, reserving a little juice if you want a looser glaze.
  3. Add the bacon, red pepper, yellow pepper and pineapple to the tray.
  4. Pour over the barbecue sauce and toss everything together until well coated.
  5. Roast for 20–25 minutes, turning once, until the bacon is cooked through and the peppers are softened and slightly charred at the edges.
  6. Give everything a final stir in the tray and serve hot, spooning any sticky juices from the base over the top.
