Why this works

A treat-style dessert that is energy-dense and high in sugar and saturated fat, with some vitamin C from the strawberries.

Vitamin C. Strawberries provide a useful amount of vitamin C and antioxidants, which support immune function and collagen formation.

Calcium and energy. Double cream contributes calcium but also adds a significant amount of saturated fat and calories.

High sugar content. Most of the carbohydrates come from caster sugar and icing sugar, so this dessert is not ideal for frequent consumption.

Method

  1. Heat the oven to 120°C (Fan 100°C, 248°F) or 140°C (Fan 120°C, 284°F, Gas Mark 1) conventional and line a baking tray with baking paper.
  2. Whisk the egg whites until stiff peaks form, then add the caster sugar a spoonful at a time until the meringue is thick and glossy.
  3. Fold in the cornflour and white wine vinegar gently.
  4. Spoon the meringue into two neat rounds on the tray, making a shallow dip in the centre of each.
  5. Bake for 1 hour, then turn the oven off and leave the pavlovas inside to cool completely.
  6. Whisk the double cream with the icing sugar and vanilla extract until softly thickened.
  7. Hull and slice the strawberries.
  8. Fill the cooled pavlovas with the cream and top with the strawberries and a few mint leaves.
