Why this works

Moderate-calorie dessert with some protein and fibre from sweet potato and egg, but relatively high in sugar for a pudding.

Beta-carotene from sweet potato. Sweet potato provides beta-carotene, which supports vitamin A status and contributes to the pudding’s orange colour.

Protein and B vitamins from egg and milk. Eggs and milk add protein, vitamin B12 and riboflavin, helping make this more filling than many desserts.

Added sugar and juice-based sweetness. Caster sugar plus fruit and orange juice raise the free sugar content, so it is best enjoyed as an occasional treat.

Method

  1. Preheat the oven to 180°C (Fan 160°C, 356°F, Gas Mark 4). Lightly grease a baking dish or six small ramekins.
  2. Peel and dice the sweet potatoes, then steam or boil until very tender. Drain well and mash until smooth.
  3. In a saucepan, simmer the fruit juice and orange juice over a medium heat until reduced and syrupy. Set aside to cool slightly.
  4. Whisk the eggs with the milk in a large bowl until combined, then stir in the sweet potato purée until smooth. If using, add a little caster sugar for a sweeter pudding.
  5. Pour the custard mixture into the prepared dish or ramekins. Set the dish in a roasting tin and add enough hot water to come halfway up the sides.
  6. Bake for 35–45 minutes, until the custard is just set with a slight wobble in the centre.
  7. Warm the fruit juice caramel briefly if needed, then spoon over the pudding before serving.
