Why this works

A rich, savoury breakfast bowl that is high in fat and salt, with moderate protein and relatively low carbohydrate content.

Chorizo. Provides protein and iron, but is typically very high in saturated fat and sodium, so portion size matters.

Cheese. Adds calcium and protein, but also contributes significantly to saturated fat and salt.

Orange juice. Supplies vitamin C, though it also adds natural sugar and little fibre compared with whole oranges.

Method

  1. Slice the chorizo sausages into thick rounds.
  2. Cook the chorizo in a dry frying pan over a medium heat for 5–7 minutes until browned and the fat has rendered, stirring occasionally.
  3. Add the orange juice to the pan and simmer for 2–3 minutes until it reduces slightly into a glossy dressing.
  4. Divide the chorizo between two bowls and spoon over the orange dressing.
  5. Top with the cheese and let it melt slightly from the heat of the chorizo before serving.
