Why this works

Moderate-energy flatbread with some protein from yoghurt, but relatively high in sodium and refined carbohydrate.

Calcium and protein. Yoghurt contributes a modest amount of protein and calcium, supporting muscle maintenance and bone health.

Sodium content. The added salt and self-raising flour make this recipe relatively high in sodium per serving, which may be a concern for people limiting salt.

Refined carbohydrate. Self-raising flour is mostly refined white flour, so the fibre content is low and it may be less filling than a wholegrain version.

Method

  1. Mix the self-raising flour, bicarbonate of soda and salt in a large bowl.
  2. Stir in the yoghurt until a soft dough forms, then knead briefly until smooth. If needed, add a little plain cooking oil to keep the dough from sticking.
  3. Divide the dough into equal pieces and roll each one out into a thin round on a lightly floured surface.
  4. Heat a dry frying pan over medium heat and cook each flatbread for 1–2 minutes on each side until puffed and lightly browned.
  5. Brush with a little plain cooking oil if you like, then serve warm.
