Why this works

A comforting, energy-dense side dish that is moderate in carbohydrate and fibre but relatively high in saturated fat from the cream.

Potatoes. Provide potassium and vitamin C, with a modest amount of fibre when the skins are left on.

Onions and herbs. Add flavour with very little sodium, plus small amounts of antioxidants and plant compounds.

Cream content. Raises saturated fat considerably, so this dish is less heart-healthy if eaten often or in large portions.

Method

  1. Preheat the oven to 200°C (Fan 180°C, 392°F, Gas Mark 6).
  2. Peel the potatoes and slice them thinly. Thinly slice the onions as well.
  3. Lightly grease a baking dish, then layer in the potatoes and onions, seasoning each layer with salt and black pepper if using.
  4. Pour the cream over the potatoes and onions, making sure it seeps through the layers.
  5. Scatter over the herbs and torn basil leaves.
  6. Cover with foil and bake for 45 minutes, then uncover and bake for another 20–25 minutes until the potatoes are tender and the top is golden.
  7. Leave to rest for 5 minutes before serving.
