Why this works
Rich, indulgent dessert that is high in energy, saturated fat and sugar, with some protein from the eggs.
Eggs provide protein and micronutrients. Eggs contribute complete protein, plus vitamin B12 and selenium, supporting overall nutrient density.
Chocolate adds flavonoids but also saturated fat and sugar. Depending on the chocolate used, there may be some cocoa polyphenols, but the dessert remains energy-dense and typically high in saturated fat.
Cream increases saturated fat. Single cream raises the saturated fat content, so this is best enjoyed as an occasional treat rather than an everyday dessert.
Method
- Finely chop the chocolate and melt it gently in a heatproof bowl set over a pan of barely simmering water, stirring until smooth. Remove from the heat and leave to cool slightly.
- Separate the eggs, placing the yolks in one bowl and the whites in a clean, grease-free bowl.
- Beat the yolks into the melted chocolate until fully combined and glossy.
- Whisk the egg whites in a separate bowl until they hold soft peaks, then fold them into the chocolate mixture in two additions to keep the mousse airy.
- Divide the mousse between serving glasses and chill for at least 1 hour, or until set and lightly firm on top.
- Serve chilled.
