Why this works

A filling, protein-rich breakfast with moderate carbohydrates and relatively high saturated fat and sodium from the cheese, butter and ham.

High-quality protein. Eggs, cheddar and ham provide around 31 g protein per serving, which supports satiety and muscle maintenance.

Calcium and B12. Cheddar and eggs contribute calcium and vitamin B12, both important for bone health and normal red blood cell formation.

Higher saturated fat and salt. Butter, cheddar and processed ham make this dish relatively high in saturated fat and sodium, so it is less suitable for frequent everyday use if you are watching cholesterol or blood pressure.

Method

  1. Place the ham in a dry frying pan over a medium heat and cook for 3–4 minutes, turning once, until crisp. Set aside on kitchen paper.
  2. Toast the bread slices until golden.
  3. Beat the eggs in a bowl, then season if desired. Melt the butter in a non-stick pan over a low heat.
  4. Pour in the eggs and stir gently with a spatula, scraping the base of the pan as they softly set.
  5. When the eggs are nearly ready, stir through the cheddar cheese and chopped parsley, then cook for 30 seconds more until just melted.
  6. Pile the cheesy scrambled eggs onto the toast and finish with the crispy ham on top. Serve immediately.
