Why this works
High in protein and energy, but also high in saturated fat and sodium due to the chorizo and cheese.
Protein-rich. Eggs, chorizo and cheese contribute a substantial protein content, which supports satiety and muscle maintenance.
High saturated fat. The chorizo and cheddar are the main sources of saturated fat, so this dish may be less suitable for those managing cholesterol.
Sodium consideration. Chorizo and cheese can make this recipe relatively salty, so it is best enjoyed occasionally if you are watching blood pressure or overall sodium intake.
Method
- Preheat the oven to 200°C (Fan 180°C, 392°F, Gas Mark 6) and line a baking tray with baking paper.
- Bring a pan of water to the boil, add 2 of the eggs, and simmer for 6 minutes for soft-boiled centres. Cool in cold water, then peel carefully.
- Finely chop the chorizo sausages and mix them with the cheese in a bowl until combined.
- Beat the remaining egg in a shallow bowl. If you have plain flour and breadcrumbs available, use them for coating; otherwise shape the chorizo mixture directly around the peeled eggs and press to seal.
- Place the wrapped eggs on the prepared tray and bake for 18–20 minutes, turning once if needed, until the chorizo is cooked through and the outside is browned.
- Rest for a few minutes before serving warm or at room temperature.
