Why this works

Energy-dense and savoury, with moderate protein and fibre but high fat and sodium, mainly from the chorizo, cheese, added salt and deep-frying oil.

Vitamin A from sweet potato. Sweet potato provides beta-carotene, supporting normal vision, skin and immune function.

Protein and calcium from egg and cheese. The egg and hard cheese add protein, with cheese also contributing calcium for bone health.

High sodium and saturated fat. Chorizo, cheese, added salt and frying make this dish relatively high in saturated fat and salt, so it is less suitable for frequent intake.

Method

  1. Peel and chop the sweet potatoes into even chunks. Boil in salted water until tender, then drain well and mash until smooth.
  2. Finely dice the chorizo and fry in a dry pan for 2-3 minutes until the fat renders and it begins to crisp. Leave to cool slightly.
  3. Mix the mashed sweet potato with the chorizo, grated cheese and enough beaten egg to bring the mixture together. Season to taste with salt and black pepper.
  4. Shape the mixture into small croquettes. If the mixture feels soft, chill it for 15 minutes before coating.
  5. Coat each croquette in plain flour, then beaten egg, then breadcrumbs.
  6. Heat vegetable oil in a deep frying pan and fry the croquettes in batches until golden and crisp all over. Drain on kitchen paper.
  7. For the dip, stir the brown sauce with a splash of water until spoonable, if needed. Serve warm croquettes with the tangy dip.
