Why this works

A rich, protein-containing savoury pancake with moderate calories and relatively high saturated fat, best suited as an occasional meal rather than an everyday light option.

Protein from eggs and cheese. Eggs, mozzarella and Greek-style yoghurt contribute a useful amount of protein for satiety and muscle maintenance.

Vitamin C from pepper. The orange pepper adds vitamin C and carotenoids, supporting immunity and antioxidant intake.

Higher saturated fat. Mozzarella, butter and coconut-based yoghurt increase saturated fat, which is worth moderating if you are watching heart health.

Method

  1. Whisk the eggs with Greek coconut yoghurt and black pepper until smooth.
  2. Cook the batter as small pancakes in a lightly buttered frying pan.
  3. Saute the diced orange pepper in the same pan for 3-4 minutes until softened.
  4. Fill each pancake with pepper and mozzarella, then fold over.
  5. Warm gently until the cheese begins to melt and serve immediately.
