Why this works
Moderate in calories with a good fibre content from potatoes, salad and fruit, but relatively high in sodium and saturated fat due to added salt, butter and coconut-based yoghurt.
Vitamin C. Strawberries and mixed peppers provide useful vitamin C, supporting immune function and iron absorption.
Potassium and fibre. Potatoes contribute potassium and fibre, which can support normal blood pressure and digestive health, especially when skins are left on.
Sodium and saturated fat concern. Added salt and butter, plus coconut yoghurt, increase sodium and saturated fat, so this is less suitable for a low-salt or heart-focused diet.
Method
- Boil the potatoes in salted water for 12 minutes until tender, then drain and cut into chunks.
- Warm the butter in a pan, toss the potatoes with herbs and a pinch of salt, and cook for 3–4 minutes to lightly colour them.
- Arrange the lettuce and sliced mixed peppers on plates, then add the warm potatoes on top.
- Serve the matcha coconut yoghurt in bowls with sliced strawberries alongside as a fresh dessert-style finish to the meal.
