Why this works

A protein-rich, savoury breakfast bake with moderate fat and relatively low carbohydrate content, but it is higher in saturated fat and sodium due to the eggs, cheese and butter.

Protein and B12. Eggs, kefir and cheese provide a useful amount of high-quality protein, plus vitamin B12 and other nutrients that support energy metabolism.

Vitamin C and carotenoids. Red and green peppers contribute vitamin C and antioxidant compounds, helping to boost the dish's micronutrient profile.

Calcium, with a caveat. Kefir and cheese supply calcium for bone health, but the cheese also increases saturated fat and sodium.

Method

  1. Preheat the oven to 180°C (Fan 160°C, 356°F, Gas Mark 4) and butter a small baking dish or foil-wrapped dish if using.

Set the dish on the middle shelf so the heat is even, and use a thin, even layer of butter so the edges release cleanly without leaving pools of fat.

  2. Dice the red pepper and green pepper, then soften them in a pan for 4-5 minutes.

Keep the peppers on a medium heat until they lose their raw crunch and start to pick up a little colour at the edges; if they brown too quickly, they will taste bitter rather than sweet.

  3. Whisk together the eggs and kefir until fully combined.

Whisk just until no streaks of egg white remain, stopping as soon as the mixture looks pale and smooth so it bakes up tender rather than dense.

  4. Stir in the cooked peppers and most of the cheese, then pour into the dish.

Fold in the additions gently to avoid breaking the peppers down too much, and leave a little of the cheese mixed through so it melts into the centre as well as the top.

  5. Scatter over the remaining cheese and bake for 20-25 minutes until just set.

Bake until the centre still has the faintest wobble rather than sloshing liquid, and avoid overbaking or the eggs will turn rubbery and dry.

  6. Serve warm in squares or spoonfuls.

Let it stand for a few minutes before serving so the custard finishes setting, which makes cleaner squares and stops it collapsing when spooned.
